Italian Chili


1 large onion, halved and chopped
1 large green pepper, seeded and chopped
4 cloves garlic, minced
1/3 c. olive oil
1 1/2 pounds Italian Sausage, remove from casing
56-ounce canned Italian whole tomatoes, drained
30 oz. kidney beans, I use white beans
15 oz. tomato sauce
2 c. red wine
2 T. fresh oregano or 2 t. dried oregano
2 T. chopped fresh basil or 2 t. dried basil
3/4 t. salt
3/4 t. fresh ground pepper
1 1/2 c. freshly grated Parmesan cheese
  1. Sauté onions, peppers and garlic in olive oil.
  2. Transfer to a large pot.
  3. In the same skillet sauté sausage 2-3 minutes or until lightly browned.
  4. Remove from the skillet and add to the pot.
  5. Stir in tomatoes, beans, tomato sauce, wine, oregano, basil, salt & pepper.
  6. Simmer uncovered 1-2 hours or until thickened.
  7. Just before serving stir in the Parmesan cheese.
