I love French green beans but they are very expensive. I bought a big bunch recently at Sam's Club and they were delicious and inexpensive. Regular green beans should be just a good as long as they are cooked tender crisp.
4 cups fresh green beans, cleaned, halved with ends cut off
2 big ripe tomatoes, cored and cut in bite size chunks
half of a red onion, diced
1/2 cup extra virgin olive oil

1/4 cup red wine vinegar
1 t. oregano, or more to taste
1 clove garlic, finely minced

- Boil green beans until al dente (tender crisp).
- Immerse in ice water to stop the cooking and keep the green color.
- Drain and dry on paper towels.
- Mix beans with the tomatoes in a medium bowl.
- Whisk together the olive oil, wine vinegar, oregano and garlic and pour over tomato mixture.
- Season with salt and pepper.
