Crispy Onion Rings

Throw out all other onion ring recipes in the house.  This wins hands down.  Make with the kids up to the point that you cook them.



 1/2 cup all-purpose flour
1/4 cup cornstarch
2 tablespoons instant mashed potatoes
big pinch of cayenne

1 cup cold club soda

2-3 cups Panko (Japanese-style breadcrumbs), or as needed
(find them in the bread crumb isle of a large grocery store not the oriental isle)
fine salt to taste
vegetable oil for frying
2-3 yellow onions, cut into 1/4-inch rings

  1. Mix flour, cornstarch, instant mashed potatoes and cayenne pepper.
  2. Add club soda and let sit until a bit thick, about 10 minutes.
  3. Put Panko crumbs in a dish with sides and add salt.
  4. Cut onions in 1/4" rings.
  5. Dip rings in batter and then coat with Panko crumbs.
  6. Deep fry till golden brown.
  7. Serve immediately or keep warm in a 220 degree oven until ready to serve.
