Chicken Ignolia

My husband requested this for his birthday dinner.  I went to the blog to print off the recipe and couldn't believe I hadn't posted it.  Easy and wonderful.  You can use boneless breasts (skin on) but it's worth the effort to find breasts with skin-on, bone in.  
It adds a lot of flavor.

3 1/2 pounds chicken breasts, or chicken pieces
1/3 cup extra virgin olive oil
1 t. fresh lemon juice
1/4 cup white wine
2 T. grated Romano cheese
2 T. fresh Parmesan cheese
1/4 t. dried oregano
1/4 t. dried basil
1/2 small bay leaf, crushed
1 large clove garlic, minced
1/2 t. salt
pepper
  1. Place chicken pieces skin side up in a baking dish (in one layer) just large enough to fit all the pieces.
  2. Combine the other ingredients and spoon over the chicken. 
  3. Bake at 350 degrees for 1 1/4 hours for bone in, 40 minutes or so for boneless breasts.
  4. Baste often.
  5. Serve with rice and spoon the dripping on the rice.
