Zesty Blue Cheese Dressing


2 ounces blue cheese, crumbled (2/3 cup)
1/4 cup vegetable oil
1 teaspoon grated lemon zest
1 tablespoon freshly squeezed lemon juice
1 cup sour cream
1/2 teaspoon salt
1 to 2 cloves garlic, peeled and minced or pressed
  1. Combine all ingredients and blend.
  2. Chill before serving.
