Shortbread Cookies


It doesn't get any simpler than this.  Four ingredients make a cookie that melts in your mouth.

1 cup all-purpose flour
1/4 cup sugar
1/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
  1. Preheat the oven to 300 degrees.
  2. Lightly butter a 9-inch diameter springform pan.
  3. Whisk the flour, sugar and salt in a medium bowl to blend.
  4. Add 1/2 cup butter and rub with your fingertips until mixture resembles coarse meal.
  5. Gather dough together in both hands and form into a flat disk.
  6. Chill at least 1 hour.
  7. Flatten disk and roll to the size of the springform pan.
  8. Place in the pan.
  9. Cut in to 8ths and prick with the tines of a fork.
  10. Bake at 300 degrees for 15 minutes or until a light golden brown.
