- Mix cabbage, onion and cilantro.
- Peel and seed cucumber, cut into bite size pieces and add to the cabbage mixture.
- You can refrigerate cabbage mixture for up to 1 day.
- Make dressing ahead and refrigerate.
- Stir dressing into cabbage mixture.
- Season with salt and pepper.
