Mexican Slaw



1 small head green cabbage (about 1 pound), finely shredded
1 small onion, minced
2 Tablespoons minced fresh cilantro (or Italian parsley)
1 European cucumber (about 1 pound)

Lime and Garlic Dressing:

½ cup salad oil
1/3 cup fresh lime juice
2 garlic cloves, minced or pressed

  1. Mix cabbage, onion and cilantro.
  2. Peel and seed cucumber, cut into bite size pieces and add to the cabbage mixture.
  3. You can refrigerate cabbage mixture for up to 1 day.
  4. Make dressing ahead and refrigerate.
  5. Stir dressing into cabbage mixture.
  6. Season with salt and pepper.
