Spinach Salad with Fresh Parmesan and Lemon Salad Dressing


1 ½ pounds fresh spinach, washed
3 hard boiled eggs, chopped
3 strips bacon, crumbled
Fresh chives, chopped

Dressing:
1 tablespoon Parmesan cheese, grated
1 clove garlic, crushed
Salt & pepper to taste
½ cup salad oil
½ cup fresh lemon juice

  1. Assemble salad ingredients in a bowl. 
  2. Cover with a damp paper towel and chill for at least an hour.
  3. Toss with chilled dressing just before serving.
