Wonderful, light, flavorful dish and so simple. Serve as an appetizer or a side dish either cold or at room temperature.
4 c. canned white beans, two 1 pound cans, drained
(I like S & W brand lightly seasoned beans)
1/4 c. olive oil
1 Tablespoon fresh lemon juice
1/2 t. salt
fresh ground pepper
1/4 c. finely chopped scallions
2 T. fresh Italian Parsley
- Whisk the olive oil, lemon juice, salt & pepper.
- Add the scallions and parsley to the beans.
- Pour dressing over all and mix.
