White Bean Salad


Wonderful, light, flavorful dish and so simple.  Serve as an appetizer or a side dish either cold or at room temperature.

4 c. canned white beans, two 1 pound cans,
drained, rinsed and dried on paper towels
 (I like S & W brand lightly seasoned beans)
1/4 c. olive oil
1 Tablespoon fresh lemon juice
1/2 t. salt
fresh ground pepper
1/4 c. finely chopped scallions
2 T. fresh Italian Parsley
  1. Whisk the olive oil, lemon juice, salt & pepper.
  2. Add the scallions and parsley to the beans.
  3. Pour dressing over all and mix.
