This is so simple but really tastes great.
1 jar fire roasted red peppers or 3-4 fresh roasted red peppers
1/4 c. extra virgin olive oil
4 cloves minced garlic
2 T. fresh oregano or 1 t. dried oregano
2 T. white wine vinegar
chopped parsley, optional
- If using jarred peppers drain and rinse. For fresh, char and peel and cut in wide strips.
- Put peppers in a large jar.
- Add the minced EVOO, garlic, oregano and vinegar.
- Shake well and refrigerate for at least an hour.
