Cucumber Onion Vinegar Salad


This is a very old-fashioned cucumber salad my mother and grandmother used to make.  Every so often I just have to make it.  I love the contrast in flavors.

2 to 3 medium cucumbers, 
or 1 large English cucumber
3/4 cup white vinegar
2 T. sugar
1/4 t. pepper
1 small white onion, thinly sliced
  1. Wash cucumbers.  Pat dry and score with tines of fork.
  2. Cut cucumbers into transparent, paper-thin slices to measure 4 cups.
  3.  Stir together vinegar, sugar, pepper and onion and pour over the cucumber slices.
  4. Cover and refrigerate at least one hour before serving.
