This must be made 1 day ahead to let the flavors develop.
3 T. minced garlic
2 T. extra-virgin olive oil
1/4 c. fresh lemon juice
1/4 c. minced fresh parsley
1/2 t. kosher salt
1/2 t. pepper
1 1/4 pounds cooked shrimp
- Place garlic and oil in a small skillet and cook over medium heat until fragrant, about 1 minute.
- Add lemon juice, parsley, salt and pepper. Stir to combine.
- Let cool.
- Toss with shrimp in a large bowl.
- Chill overnight and serve.
