My sister gave me this recipe for rare roast beef. This is edge to edge medium rare. Allow 4 to 5 hours for the cooking.
She calls it beef candy!
3 pound roast beef (sirloin tip, rump, prime rib or any boneless beef roast

- Rub the roast with oil.
- Bake on open oven rack (yes, the oven rack) in a preheated 300 degree oven for 1 hour. Place a cookie sheet one or tow racks down to catch the drippings.
- Without opening the oven door, reduce the heat to 200 degrees and continue baking for at least 3 -4 hours more.
