BBQ Beef Brisket


I've made this for years.  It cooks really slowly in the oven.  I love to come home to the smell of the smokey brisket.  Assemble the ingredients the night before cooking.

1, 4-to-6-pound beef brisket
1–4-ounce bottle of liquid smoke
Garlic salt or powder
onion salt or powder
celery salt
Worcestershire sauce to taste
pepper
BBQ sauce, homemade or store bought
  1. Place the meat in a long shallow pan.
  2. Cover with the liquid smoke and sprinkle generously with the garlic salt, onion salt and celery salt.
  3. Refrigerate overnight.
  4. Sprinkle generously with Worcestershire sauce and pepper.
  5. Cover with foil and bake at 275 degrees for 1 hour per pound.
  6. Uncover and cover with BBQ sauce (recipe follows) and bake 1 hour longer.
BBQ Sauce:
1-14 oz. bottle Heinz ketchup
1/2 c. brown sugar
1/2 t. salt
1/2 t. dry mustard
3 cloves garlic
1 ketchup bottle of water
3/4 T. Worcestershire sauce
1/8 t. cayenne pepper
1/4 T. liquid smoke
1/2 t. vinegar
1/4 t. pepper
1/2 T. A-1 sauce
  1. Combine the ingredients and simmer for 30 to 40 minutes.
