Pepper Jelly Tarts

2 cups shredded cheddar cheese
1/2 c. butter, softened
1 t. paprika
1 cup flour
1/8 t. cayenne pepper
2/3 c. hot pepper jelly

  1. Beat together cheese, butter, paprika and cayenne.  
  2. Stir in flour just until mixture forms a ball.  If it's too crumbly, add a T. of water to get a dough consistency.
  3. Shape into 30 small balls.
  4. Press each ball into a mini muffin cup to form a shell.
  5. Spoon 1 t. jelly into each shell.
  6. Bake at 400° until golden brown.
