6 firm, medium tomatoes, peeled and sliced ½" thick
Dressing:
2/3 c. oil
¼ c. wine vinegar
¼ c. parsley, chopped
¼ c. chopped green onion
1 garlic clove, minced
1 t. salt
1 t. dill weed
1 t. basil
¼ t. fresh pepper
- In a small bowl or screw-top jar, combine dressing ingredients and mix well.
- Arrange sliced tomatoes in a serving dish (line with fresh lettuce of you wish)
- Pour dressing over tomatoes.
- Cover and chill 1 to 2 hours, basting occasionally.
