1/4 c. milk
1/4 c. Panko breadcrumbs
1 1/2 pounds ground turkey
1/2-pound ground beef
1 large egg, lightly beaten
1/2 cup canned sliced water chestnuts, rinsed, drained, and finely chopped
1 T. finely minced ginger root
1/2 t. salt
1/2 c. chopped fresh cilantro, plus 1/4 c. sprigs, optional
5 T. soy sauce, divided 1 T. and 4 T.
4 t. Asian sesame oil, divided 2 t. & 2 t.
2 T. fresh lime juice
2 T. water
2 t. sugar
- Preheat oven to 500°.
- Pour milk over Panko crumbs in a large bowl and stir until liquid is absorbed.
- Add ground meat, egg, water chestnuts, salt, chopped cilantro, 1 T. soy sauce and 2 t. sesame oil.
- Mix with your hands until combined well.
- Shape 3 T. of the meat mixture into balls and transfer to a baking dish.
- Arrange meatballs 1/2 inch apart.
- Bake until cooked through about 15 minutes.
- To make sauce: Stir together lime juice, water, sugar, 4 T. soy sauce and 2 t. sesame oil. Stir until the sugar is dissolved.
- Transfer meatballs to a serving dish. Stir sauce, then drizzle meatballs with 1 T. sauce and sprinkle with the cilantro sprigs if desired.
