Good-tastes like a restaurant baked potato with all the trimmings.
4 baking potatoes, boiled
1 ½ c. light cream
4 T. butter
½ pound yellow cheese
½ pint sour cream
¾ c. chopped green onions
6 strips bacon, fried and crumbled

- Peel cooled potatoes and grate or put through a ricer.
- Combine cream, butter and cheese in a double boiler and stir until blended.
- Add cheese mixture to grated potatoes and put in a casserole.
- This may be done ahead.
- Bake at 350 degrees for 30 minutes or until bubbly.
- Top with sour cream, onions and bacon.
- Bake about 5 minutes.
