I made this up the other night to use up leftovers. It's good.roasted red peppers, fresh or in a jar
fresh mozzarella, sliced
grated fresh Parmesan cheese
fresh or bottled Italian vinaigrette
fresh basil chiffonade
1. Cut the peppers to about the size of the mozzarella slices.
2. Stack the peppers and mozzarella and sprinkle with fresh Parmesan and basil chiffonade.
3. Drizzle with vinaigrette.
4. Cover with plastic wrap and chill until serving.
