Lemony Tuna Salad


Stuff the salad into a pita pocket for something different or just eat from the bowl while standing at the kitchen counter like I do.  Food eaten while standing contain no calories.    This yields 4 serving.
¼ cup mayonnaise
4 teaspoons fresh lemon juice
2 teaspoons grated lemon peel
Salt and pepper to taste
One 6-ounce can solid white tuna in water, drained
1 cup canned white beans ( I prefer S&W Small White Beans, lightly seasoned)
½ English cucumber, cut into ½ inch cubes
¼ cup finely chopped red onion
1 large head romaine lettuce, shredded
1 cup cherry tomatoes, halved
  1. In a large bowl, whisk together the ¼ c. mayonnaise, 4 t. lemon juice and 2 t. lemon peel.
  2. Season with salt and pepper.
  3. Add the tuna, breaking it apart slightly with a fork.
  4. Add the beans, cucumber and onion.
  5. Season with salt and pepper to taste.
  6. Arrange the romaine on 4 large plates.
  7. Top with the tuna salad and tomatoes.
