Garlic and Herb Smoked Tomatoes


This is great with ribs or chicken. We have an electric water smoker which makes some purists cringe but we crank it up and then go see a movie without any worries.

vine ripe tomatoes, one per person
olive oil
fresh oregano
fresh garlic, finely chopped
chopped shallots
brown sugar
salt & pepper
fresh rosemary

  1. Core tomatoes and cut an X in the top of the tomato about 1/3rd way down into the tomato.
  2. Cook the shallots and garlic in a bit of olive oil until tender.
  3. Drizzle each tomato with olive oil.
  4. Sprinkle the tomatoes with the garlic/shallot mixture, brown sugar, salt, pepper, and fresh rosemary.
  5. Wrap the tomatoes in foil forming a chimney at top.
  6. Place in smoker at about 225 degrees and cook until tender about and hour and 10 minutes.
