1 ½ pounds sweet potatoes
2 pounds acorn squash
4 tart apples
1 t. salt
fresh ground pepper
1/3 c. apple cider
1 c. maple syrup
4 T. butter
- Peel the sweet potatoes and cut into 1"x2" chunks or slices.
- Place in a saucepan, cover with water and simmer for 15 minutes.
- Drain and reserve.
- Preheat oven to 375°.
- Peel and seed the acorn squash and cut into the same size chunks as the sweet potatoes.
- Pare, core and quarter apples.
- Butter a large shallow pan.
- Arrange potatoes, squash and apples in the pan.
- Salt and pepper.
- Pour cider then syrup over all and dot with butter.
- Bake 40 minutes.
- Baste every 10 minutes.
- Serves 8.
