Maple Baked Squash, Sweet Potatoes and Apples

1 ½ pounds sweet potatoes
2 pounds acorn squash
4 tart apples
1 t. salt
fresh ground pepper
1/3 c. apple cider
1 c. maple syrup
4 T. butter
  1. Peel the sweet potatoes and cut into 1"x2" chunks or slices.
  2. Place in a saucepan, cover with water and simmer for 15 minutes.
  3. Drain and reserve.
  4. Preheat oven to 375°.
  5. Peel and seed the acorn squash and cut into the same size chunks as the sweet potatoes.
  6. Pare, core and quarter apples.
  7. Butter a large shallow pan.
  8. Arrange potatoes, squash and apples in the pan.
  9. Salt and pepper.
  10. Pour cider then syrup over all and dot with butter.
  11. Bake 40 minutes.
  12. Baste every 10 minutes.
  13. Serves 8.
