Every once in a while I get a taste for this coleslaw. It's so simple
that I hesitate to even put it here but I want it on the list for when I'm
looking for a salad for dinner.
1 small head of fresh green cabbage
1/2 of a red onion, or to taste, chopped
lots of fresh pepper
salt to taste
red wine vinegar
extra virgin olive oil
- Shred the cabbage somewhat finely.
- Add the chopped onion, pepper and salt.
- Add olive oil and toss until it glistens.
- Add vinegar to taste and toss.
