Oil and Vinegar Coleslaw

Every once in a while I get a taste for this coleslaw.  It's so simple
that I hesitate to even put it here but I want it on the list for when I'm
looking for a salad for dinner.

1 small head of fresh green cabbage
1/2 of a red onion, or to taste, chopped
lots of fresh pepper
salt to taste
red wine vinegar
extra virgin olive oil
  1. Shred the cabbage somewhat finely.
  2. Add the chopped onion, pepper and salt.
  3. Add olive oil and toss until it glistens.
  4. Add vinegar to taste and toss.
